Stir fry kale with ginger for an added zip to a healthy green

Raisins, or almost any dried fruit, add a unique flavor to a dish of stir-fried kale.
I’ve never had a taste for freshly cooked greens – whether they are turnip greens, collards, kale, or spinach. As a child, I think the greenness of these veggies looked too much like grass, so they couldn’t possibly taste good to me.

But with the health benefits of greens, particularly for women, my taste buds have changed significantly. With the high amounts of Vitamins A and C found in kale, I’ve spent time cooking the leafy vegetable several ways to add flavor and appeal.

Most of the greens I’ve eaten over the years have been cooked thoroughly with ham or bacon. But I like a crispier green, and kale can provide that crispness when stir fried.

Adding something sweet such as raisins or other dried fruits such as apples or cranberries also produces an interesting and tasty flavor to stir-fried kale.

Many growers in the area have kale that’s now available to buy at area markets or farms, so if you want to add something healthy to your diet, try a different green recipe.

Here’s what you’ll need for some stir-fried kale:

About one pound of kale washed
5 cloves of garlic, chopped or crushed
2 tablespoons of olive or canola oil
¼ teaspoon of salt or sea salt
 1 tablespoon of fresh ginger
½ cup of raisins or other dried fruit

After you’ve washed your kale, cut off the stems and ribs. Then, chop the kale, setting it aside in a bowl while you prepare your wok.

In your wok (or large frying pan if you don’t have a wok), add the two tablespoons of olive oil, heating at medium low or medium. Place your ginger and chopped garlic in the wok,
cooking the two ingredients for about a minute.

Then, add your kale, stir frequently as your pan or wok heats up.

Keep stirring the kale, assuring that the leaves are coated with the oil and the ginger and garlic are mixed with the kale.

After the stir fry has cooked for about five minutes, the kale leaves should become tender. Now add your raisins or dried fruit. Stir the raisins with the kale mixture for another two minutes, and add your salt to taste.

Then, place your kale stir fry on your platter, and you’re done. You’ll find the dish simple enough and tasty.

The kale stir fry dish makes a nice side to baked chicken or pork chops. If you're vegetarian, the kale can serve as the main dish with tofu tossed in with the stir fry.
