Recipe Corner  Diced apples fried with chopped cabbage and onions make a sweet side dish or dinner entrée
Many growers continue to harvest cabbage well into the winter. With cancer-fighting properties, cabbage also stands out as a good vegetable to eat with a variety of meals since it provides a good source of Vitamin C and potassium.

Since I enjoy cabbage and potatoes with a little polska kielbasa, I thought I’d try something different with a sweet taste by stir-frying cabbage and apples. This cabbage apple recipe is simple and quick to prepare. Here’s what you’ll need to make it:

1/2 head of large cabbage or 1 medium cabbage head
2-3 medium sized apples, peeled, cored and diced
½ medium onion diced
½ teaspoon of salt
3 tablespoons of brown sugar
1/8 teaspoon of pepper
Dash of allspice
2 tablespoons of canola oil

Place your canola oil into a frying pan or wok and heat to medium low.

While the oil is heating up, cut your cabbage into quarters. From there, slice each quarter into cubes. When cubing, if layers of the
cabbage slide apart, that’s fine. Once the cabbage is cubed, place it, the apples and onion in the frying pan.

Then, add your salt, brown sugar, pepper and allspice and stir. The cabbage may sizzle and crackle a bit as it is frying, so stir the mixture with your spatula or spoon frequently.

Continue this frying for about 15 minutes, if you like your cabbage slightly crunchy or firm. If you prefer your cabbage tender, you can cover the pan with a lid, leaving a slight crack or opening for steam to be released for a few more minutes or you can steam your cabbage before you fry it.

After 15 minutes, your cabbage and apple dish is finished. Enjoy. I’ve seen a variety of ways cabbage and apples can be prepared. Some prefer white sugar, but I like mine with brown sugar. Others like using red cabbage for the color factor.

You can serve this side dish with chicken, pork or beef or you can make it an entrée by adding slices of homemade sausage or polska kielbasa.
